I need your help. I'm looking for a good hush puppy recipe. All the ones I've tried are just not right. I want what I used to pop into my mouth as a kid...light, crispy outside, soft light yummy middle with just a hint of sweetness. Do you know how?

All the ones I've made, I can get the flavor almost there, but the texture is all wrong. I think I need to find a finer corn meal to start, but still, the insides end up all chewy and really heavy. And talk about ugly. They look more like a Dali melting something than little balls.

You're the southern cooking goddess round here. :heart:

hey wit, have you tried zipping the corn meal in a food processor until its fine enough?

Thank ya momma! You know I go to you for culinary help, but Ravn is the in house southern belle. I haven't tried that yet. I've tried with the egg, without the egg, but not whipped egg whites.

And you're right, gotta have the onion. :smile:

I'm determined to get this down.
