I go away for works for days at a time (I travel about 10 days a month) and I like to try and leave some ready to heat up dinners at home.... he will only really use the oven or microwave and anything that needs more than one step is out!

I have done pasta type things (ie lasagna) and chili but does anyone have any other meals that are good to make a bunch and freeze well into single serving "microwave dinners"?

I freeze all kinds of soups & stews & they reheat well

I've had success with freezing chicken cutlets. I'll buy the big "family pack" of cutlets, bread & fry (or bake) them & freeze individually.

I just try to avoid doing the reheat entirely in the microwave because that makes them a bit soggy. I'll take the chill off them in the mic, then into the oven to finish heating. Lots of options too--chicken parm, cutlet sandwich, the list goes on.

Any kind of soup/stew...as long as it doesn't contain potato..potatoes get gross once they've been frozen, at least if they're in a soup....something about water molecules...blech.

burgers freeze well... you could pre-cook and use fun veggies to make them interesting... onion, ginger, soy sauce, red pepper... etc

meatballs!!

make a huge batch, then freeze them in bags sized for your needs.

I make up a big batch, seperate and freeze and then I have them for spaghetti, subs, brown gravy, etc

thanks for the ideas ladies! .... the chicken cutlets sounds like a good idea and he is ok just using the oven for like 20 min... he just refused to do more than one step so unfortunately I think that burgers are out - and as for the meatballs I am currently doing whole pasta dinners (pasta, sauce and meatballs all in one container) I do curently have a big bag of normal (ie un-sauced) meatballs and one of mini meatballs for soups that I use when I am cooking during the week..... hmmm maybe that will be dinner tonight actually (escarole soup)!

hmmm the point is to have something good and healthy and yummy so he doesn't get take out or eat microwave dinners - I don't think that spam (or a gallon or rice) falls into that catagory

maybe cut back onthe rice a little, use orgainc brown rice, wild rice, basmati....

hehe don't worry I knew it was a joke..... I figured maybe more info as to the nature of the request would help

due to the early st.patricks day parade thing in hoboken this weekend he is going to have to fend for himself tues - fri .... next time I promise I won't leave all the prep for the night before!
